The first Thanksgiving feast is legendary. This is, after all, what began the Thanksgiving tradition. This year, host a truly traditional holiday feast that mimics the first Thanksgiving menu. This historically inspired Thanksgiving party will be a festive way to celebrate the holidays.


You might think that this feast would be the same as what we now eat at Thanksgiving. Our modern-day meal is modeled after the first Thanksgiving meal, after all. It may be surprising to learn that the first Thanksgiving foods were actually not the same as those we eat at Thanksgiving today.

 




Take a look at the suggestions below to start planning a menu full of the first Thanksgiving food:

•Mains: It may come as a surprise that the main dishes served at the first Thanksgiving feast were not the same as the dishes we eat now. While the pilgrims would have had turkey, they would have also enjoyed numerous other meats. This all depended upon what was seasonally available. At the time, popular meats were waterfowl and venison as well as seafood such as lobster and clams. We don’t usually think of Thanksgiving as a time to eat seafood, but for an authentic Thanksgiving menu, be sure to include a seafood portion.

•Sides: Side dishes would have also been created based on what ingredients were available at the time. Familiar ingredients would have included pumpkin and berries, such as cranberries. Corn was also a major part of this meal. However, it is unlikely that corn on the cob was served, as this preparation was considered suitable for peasants. Rather, corn may have been eaten in the form of “samp,” a corn-based oatmeal. Onions were another popular side dish at the time and would pair well with the rest of the dishes in a traditional Thanksgiving meal.

•Dessert: Unlike the meal we know and love today, dessert was not actually a major part of the first Thanksgiving menu. Favorite items, like pies, were probably not very popular at the time. This was due to the limited sugar supply brought by the pilgrims on their ships, as well as the fact that there were no ovens. However, this doesn’t mean that you shouldn’t make your favorite pie for Thanksgiving! For a traditional dessert, whip up a batch of pudding to accompany your pies, or experiment with a classic bread pudding.


These are just a few suggestions for an original menu, just like the one eaten on the first Thanksgiving. To truly celebrate this holiday the right way, be sure to include a “giving thanks” portion in which everyone at your table says what they are thankful for. This may or may not have been something the original Thanksgiving guests did, but it will certainly emanate the original feelings that inspired the first Thanksgiving meal. 4. Rub the entire turkey with oil and sprinkle salt and pepper on both the inside and outside of the turkey. Add additional spices such as garlic, rosemary, or cayenne pepper. Stuff your turkey or leave it plain.

5. Place the turkey in the oven and baste it every 30 minutes to keep it moist and flavorful, and to promote even browning. Insert the meat thermometer into the thickest party of the thigh and cook until it registers to 175 to 180 degrees F. An average sized turkey (between 12-14 lbs.) will need to cook for about four hours. Be sure to base the cooking time on the size of the bird. Cook the turkey around 20 minutes per pound.

6. Remove your fully cooked turkey from the oven and let it sit for 15-20 minutes before serving.

7. Carve your turkey and enjoy!


Remember to wash your hands thoroughly before and after handling the raw turkey. With a little patience and careful attention you’ll have a beautiful main dish to serve on Thanksgiving day.

Ingredients:

• 4 sweet potatoes

• ¾ cups of chopped pecans

• ¼ cup of butter

• 1 large chopped apple

• ¼ cup of golden raisins

• ¼ teaspoon of ground nutmeg


Directions:


Place aluminum foil over a baking sheet and put the potatoes on top. Bake the potatoes at 425ºF for 1 hour and 15 minutes. Use a skillet to heat the nuts over medium-low heat. Stir the nuts and cook them for five to seven minutes. Once complete, take them out of the skillet. Put butter in the skillet. Once melted, add the chopped apple and raisins. Cook the ingredients for around two to three minutes. Add in the brown sugar, cinnamon, and nutmeg. Cut the potatoes in half with a knife, lengthwise. Carefully remove the pulp and place it into a large bowl. Keep the potato skin shells. Add the apple mixture to the bowl and stir the ingredients together. Spoon the sweet potato/apple mixture into the potato skin shells, and place them on a baking sheet. Bake the stuffed potatoes at 350ºF for 20 minutes. Sprinkle nuts over the top, if desired.


Sweet Potato and Carrot Mousse

Ingredients:

• 4 sweet potatoes (large)

• 1 lb of carrots

• 2 ½ cups of water

• 1 tablespoon of sugar

• 12 tablespoons of butter (sweet and softened)

• ½ cup of crème fraiche (1 part sour cream to 1 part heavy cream)

• ½ teaspoon of nutmeg

• Dash of salt and pepper

Directions:

Peel the carrots, and cut them so they are in one inch pieaces. Place the carrots in a saucepan. Add the water, sugar, two tablespoons of butter, and a dash of salt and pepper. Over a medium heat, bring the mixture to a boil. Cook the ingredients, uncovered. Watch for the water to evaporate, and observe as the carrots sizzle in butter. Remove them from the stove.


Remove the skin from the sweet potatoes and mix the potatoes together with the carrots, crème fraiche, butter, nutmeg, salt, pepper, and butter in a food processor until you have a smooth mousse.

1 c. canned pumpkin

2/3 c. milk

1 pkg. vanilla instant pudding

1/4 to 1/2 tsp. nutmeg

1/4 to 1/2 tsp. ginger

1/4 to 1/2 tsp. cinnamon

1 baked pie shell




You can use 3/4 tsp. pumpkin pie spice instead of nutmeg, ginger and cinnamon. Prepare Dream Whip as directed on envelope. Set aside 1 cup for garnish. To remaining 1 cup Dream Whip, add pumpkin, milk, pudding and spices. Mix slowly with beater, just until blended, 1 minute. Pour into pie shell. Chill at least two hours. Garnish with topping.

Sweet Cream Cheese Pumpkin Dip


Ingredients:

• 2 cups confectionery sugar

• 1 package (8 oz.) cream cheese

• 1 can (15 oz.) solid pack pumpkin

• 1 tablespoon ground cinnamon

• 1 tablespoon pumpkin pie spice

• 1 teaspoon frozen orange juice concentrate


Directions:


Mix the cream cheese and sugar in a medium sized bowl until well blended. Gradually add in the pumpkin until smooth. Add the cinnamon, pumpkin spice, and orange juice and continue to stir. Pour into a small serving dish and chill until it is ready to be served. Serve this pumpkin dup with ginger snap or graham crackers. For extra presentation points, cut a hole in the top of a small pumpkin and carve out the insides so a small serving dish or bowl can fit right inside.



Savory Pumpkin Dip


Ingredients:

• 1 large can of pureed pumpkin

• 1 tablespoon olive oil

• 1 tablespoon garlic

• 3 tablespoon course Dijon mustard

• 1 tablespoon fresh chopped rosemary


Directions:


In a skillet over medium heat, cook the olive oil and garlic until garlic is golden brown. Remove from heat and add in Dijon mustard. Stir to combine well. Let stand until the mixture is cooled, about 20 minutes. Then add in the pumpkin puree, rosemary, and salt and pepper to season. Combine well. Serve with homemade or store bought pita chips.



Spicy Pumpkin Dip


Ingredients:

• 12 ounces cream cheese, softened

• 3/4 cup canned pumpkin puree

• 2 tablespoons taco seasoning mix

• 1/8 teaspoon garlic powder

• 1/3 cup chopped dried beef

• 1/3 cup chopped green pepper

• 1/3 cup chopped red pepper


Directions:


In a large mixing bowl, combine the cream cheese, pumpkin puree, taco seasoning, and garlic powder. Beat well using a hand mixer until smooth. Fold in the beef, green peppers, and red peppers. Cover and refrigerate for one hour before serving. Use corn tortilla chips or crackers for dipping.


 


 


 




Easy Pumpkin Pie


 





3/4 cup sugar 1 1/2 teaspoons pumpkin pie spice 1/2 teaspoon salt 1 can (15 oz) pumpkin (not pumpkin pie mix) 1 1/4 cups evaporated milk or half and half 2 eggs, beaten 1 Pillsbury® Pet-Ritz® frozen deep-dish pie crust


1 Heat oven to 425°F. In large bowl, mix filling ingredients. Pour into pie crust.

2 Bake 15 minutes. Reduce oven temperature to 350°F; bake 40 to 50 minutes longer or until knife inserted near center comes out clean. Cool 2 hours. Serve or refrigerate until serving time. Store in refrigerator.

Here is a quick guide, whether you have 4 days or 12 hours, to safely thaw your frozen turkey without risking bacterial growth. No matter which method you select, cook the turkey promptly after thawing.


 


Thawing your turkey in the refrigerator is the preferred method for safety reasons, but you can also thaw it in cold water. The thing to remember about both methods is that they keep your turkey cold while thawing - the key to preventing excessive bacterial growth.


The Fridge Method:

Using the following chart, simply place the turkey in its original wrap on a tray or in a pan to catch moisture that accumulates as it thaws.


8 to 12 pounds 1 to 2 days

12 to 16 pounds 2 to 3 days

16 to 20 pounds 3 to 4 days

20 to 24 pounds 4 to 5 days


Cold Water Method:

If it's the day before you plan to serve your turkey and you just remembered that it's still sitting in the freezer, don't despair. Check the wrapping to make sure there are no tears, and simply place the bird in its unopened bag in the sink or in a large container and cover it with cold water. If the wrapping is torn, place the turkey in another plastic bag, close securely, and then place in water. You will need to change the water frequently to assure safe but effective thawing. The National Turkey federation recommends every 30 minutes as a rule of thumb.

 The ancient Aztecs living in Mexico were the first to domesticate wild turkeys. In the pre-Columbian years, wild turkeys could be found in large numbers from the Eastern coast of North America to Honduras. In 1519, when the Spanish came to Mexico, they were met with a bounty of both wild and domesticated turkeys. By the following year, they had introduced domesticated turkeys to the Caribbean and eventually to Spain. It didn’t take long before they were widespread throughout the Mediterranean and Western Europe. By 1550, they had arrived in England. When the English colonists first arrived in America, wild turkeys were a welcome sight, as they were already familiar with eating and preparing the bird. They were also easy to hunt in the hard winter months, as they were clearly visible in the snow. Once colonies were established, settlers began importing domesticated turkeys from England to America.
