Heres on for a real good potato salad that can go with just about any dinner. it's my Grama Glady's recipe that's been passed down to my mother then me. What you will need:
Red potatos, scallions, celery, Eggs(boiled), Butter, mayo, mustard, And a pack or two of dry Italian recipe mix.
Boil the potatos and eggs sepeeratly. Chop up the scallions and celery. Put all chopped veggies & eggs in a big bowl. Add the dry italian mix. Add cooked, (chopped into cubes) potatos. Add butter, mayo and a small amount of mustard. Fold all ingerediance together untill well mixed. Add salt to taste if nessecery. Chill for an hour and serve. Enjoy. Let me know if you use this and how it worked out for you.

I would love to get good recipes using Splenda that are fairly easy. I hate the ones that are so complicated they seem like a science project. I love good recipes people make and eat themselves.

We do a cookbook at work and add to it every year at this time. So I am eager to see what kind of recipes you all have and must figure out which I would most like to share.

hawaiian wedding cake:
cake- 1 box yellow cake with pudding, 4 eggs, 1/2 c. oil, 1 can mandarin oranges
topping- 1 lg can crushed pineapple, 1 sm instant vanilla pudding, 1 lg or 2 reg. cool whip
topping- mix all ingredients (include juice with pineapple) and refridgerate
cake- (do not use the directions on cake box) mix ingredients (include juice w/ mandarin oranges) in large mixing bowl. make sure there are no big chunks of oranges in mixture. pour into 2 9" pans or 3 8" pans. bake at 350 until cake is done (about 30-40 min) Let cool.
cut each cake into 2 even layers. Place bottom of first layer onto a lg plate, cover with topping. add another ckae laer and repeat. once all layers or placed cover the outside of cake with remaining topping.
You can use toothpicks to hold layers in place. If you use 3 cake pans then dont cut in half. this is a very moist and delicious cake! great for any occasion just remember to tell your guests about the toothpicks!

Grandma's Easy custard Pie:
2 cups milk
1/2 cup bisquick
3/4 cup bisquick
4 eggs
1/4 cup margarine
1 1/2 tsp vanilla
combine all ingredients in blender at low speed for 3 minutes. grease 9" pie pan and pour in mixture. Bake at 350 for 40-45 minutes. This recipe includes bisquick so it creates its own crust. another one of my favorites!!

quick and easy spinach dip

1 cup sour cream
1 cup mayo- the best for flav is kraft brand.mmmm
1 block of pepper jack cheese
1 can of grated parmesean and romano cheese
1 package of frozen spinach about a 9 oz will do

clean and drain the spinach
put that in the bowl and add your mayo and sourcream and mix mix
now in your serving dish add a layer of the grated cheese, and cut off the block a little bit enough to cover the bottom of dish. add a layer of the spinach mix, and reat this untill all is gone.

place in the stove and bake on 450 for about 10-15 minutes, this allows the cheese to melt and the spinach to seep out flavors..

this is sure to be a hit.. we all love it here and you know how it is to get kids to eat greens.. haha disguises...lol.. let me know how you like it and i can come up with others. i am better at appetizers tho however i am sure i can come up with something for you.

My favorite Christmas Cookies:
Christmas Cookies
Cuervo Cookies

1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
Lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality. Take a large bowl, check the Cuervo
again to be sure it is of the highest quality, pour one level cup and
drink. Turn on the electric mixer. Beat one cup of butter in a large
fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's
best to make sure the Cuervo is still OK, try another cup just in case.

Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck
in the cup of dried fruit, Pick the frigging fruit off floor.
Mix on the turner. If the fried druit gets stuck in the beaterers just
pry it loose with a drewscriver. Sample the Cuervo to check for
tonsisticity. Next, sift two cups of salt, or something. Check the Jose
Cuervo.

Now shift the lemon juice and strain your nuts. Add one table. Add a
spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over. Don't forget to
beat off the turner. Finally, throw the bowl through the window, finish
the Cose Juervo and make sure to put the stove in the dishwasher.

Here's one: butter baking dish. Alternate layers of sliced squash and onion slices. Place 3 or 4 slices of uncooked bacon on top. Cover with aluminum foil.tightly Bake in a 375 degree oven for 45 minutes or until desired tenderness. Yum!

oh-you can add cut up uncooked slices of peeled potatos if you like but I like it best without the potatos.

Here's a quick and easy nacho dip that my family loves.....

2 cans Campbell's nacho cheese soup (don't add any h2o or milk!!!), 1 can refried beans (we like refried black beans, or refried beans with spicy peppers), & 1 lb of gound beef, ground turkey or chirizo; browned & drained. Mix all together, and warm. Serve with corn chips, jalapenos and sour cream. Yummy!!! Good to take for pot-lucks too!!!

Great Mini Chesse Cakes


Ingredients:


2 pkg's cream chesse


1/2 c sugar


1t vanilla


2 egg


Vanilla wafers


Cherry ( or your favorite) pie filling


Preheat oven @ 350


soften cream cheese and mix together in mixing bowl using mixer on medium speed until well blended. Using cupcake pan line with cupcake papers. Place a vanilla wafer in the bottom of each one. Fill with batter about half way and place in oven for 13-20 minutes. Cooking time will vary just poke center with toothpick to check for being done. Let cool completely( they may fall somewhat) If cooked too long they may crack a bit  But don't worry! 


Once they have cooled top with favorite pie filling . Keep refrigerated. These are the bomb and loved by all

This cake tastes just like a dreamcicle!


Orange Dreamsicle Cake


Ingredients


Orange cake mix(white is okay if you can't find orange)


3oz orange jello (sugar free is okay)


3.4 oz vanilla instant pudding


1 t. pure orange extract


1t. vanilla extract


8 oz cool whip (fat free is okay)


 


Make cake as directed using 9x13 pan. As soon as it comes out of the oven(while still hot) make jello using 1c. boiling water. Poke several holes in top of cake( I use round end handle of my wooden spoon) Pour jello over cake into holes. Allow to cool completely. Once cake is cooled make pudding using 1 c. milk, add 1t. orange extract, 1 t. vanilla extract, and fold in the cool whip. Mix well by hand and spread over cake  and refrigerate.


This is always a big hit for me and my guests

          Crockpot recipe you say? Here's one I messed up a bit, but It turns out better if you follow these instructions! Very, very easy!


Ingredients:


1lb unpeeled small potatoes (6-8, 1in. pieces) SWEET YELLOW POTATOES-I put...*giggles* purple ones! Turnes the whole thing purple, then I put chicken broth instead of gravy and it turned to soup! Talk about a terrible mess up!


2cups chopped onions (or small whole onions[peeled of course])


6 boneless skinless chicken thighs (1 1/4 lbs)


1/2t salt and 1/8t pepper (don't have to be prescise =])


1jar chicken gravy (can)


1 1/2 cups thawed sweet peas


Instructions:


1.) Spray slow cooker. Place vegtables, except peas, into the slow cooker. Sprinkle chicken thighs with salt and pepper, and place on top of vegtables. Pour gravy over the top.


2.) Cover and cook at low heat for 2-10 hrs


3.) Stir in pease and increase setting to high. Let cook 15mins. longer. (or until peas are tender)


4.) Serve with some bread and enjoy!

 In a pan mix


1 can cream of chicken soup


1 tub sour cream


1 can green chilis


1 jalapeno,chopped fine


salt and pepper


heat slowly


sautee sliced  4 chicken breast with one sliced onion.cook till golden brown in a skillet


place  in flour tortilla,add a spoon of the sauce from the pan,sprinkle in grated cheese


roll up. place  in a baking pan ,cover with  sauce& cheese .Bake at 350 about 25 mins untill golden brown YUMMY!!

Where is great drink since it's summer time!!


2 ounces lemon-flavored rum (recommended: Bacardi Limon)

1/4-ounce sweet blue liqueur (recommended: Blue Curacao)

1/4-ounce sweet and sour mix

2 ounces pineapple juice

2 ounces grapefruit juice

Shaved ice

Cherries, for garnish


 


Add all liquid ingredients to a martini shaker. Shake and strain into a martini glass over a scoop of shaved ice. Serve with a cherry, for garnish, and a spoon.

 


It's like an adult snow cone it's great!!

Here is a good Super easy chocolate pumpkin muffin recipe I found that I love!  Even my husband that is anti-pumpkin,


One box of Chocolate Cake mix


One can of Pumpkin (small size can - not the huge one


Mix together put in cupcake cups and bake at 350 usually about 30 mins, I check mine quite frequently because I'm impatient


They are a heavy muffin, but very low in fat.  I use the Sugar free cake mix - so there is even less sugar.  I was so skeptical at first then I tried it, and I in love with these muffins.  Even my kids love them!  It's fun to pass them out at work, and people think they are getting a bad for them muffin, then  when you tell them what is in them, they are in shock!

Heres another favorite:


Buffalo Wing Dip


1 Chicken breast cut up and cooked


1 cup of Blue cheese Dressing


2/3 cups of Franks red hot


2 8oz packages of Cream cheese (room temp)


16 oz package of shredded sharp cheddar cheese


 


Mix up Blue Cheese, Cream Cheese and Red hot with a mixer until smooth (may be lumpy if you didn't let the cream cheese come to room temp.) 


Blend in chicken, cover with the shredded cheese, bake at 400degrees for 30 minutes


Then mix and serve with Tostito's or any corn chips. 


We love this at our house.   Great party dip.
