Cherry Marshmallow Cake
4 cups miniature marshmallows
1 (18 1/4 oz.) box chocolate cake mix
1 can (21-ounces) light cherry pie filling
10 oz. diet Sprite
2 medium egg whites
1/4 cup miniature chocolate chips
Preheat oven to 350 degrees. Spray a 9x13-inch baking pan with nonstick cooking spray.
Spread marshmallows evenly over bottom of prepared baking pan. Prepare cake using diet Sprite and egg whites. Pour batter evenly over marshmallows. Spoon cherry pie filling evenly over batter and sprinkle chocolate chips on top.
Bake 45-50 minutes. As the cake bakes, the cherry pie filling will sink to the bottom and the marshmallows will rise to the top and form a thin topping that will be bubbly and browned.
