Cut up your pork in small, bite-sized pieces and dip in taco seasoning;  then brown on all sides in your favorite skillet.  In the meantime, fix the sauce:  mix a jar of tomato salsa (I like it medium) with some water (I'd rinse the jar) and a few tablespoons of peach preserves.  Mix with pork and cook until ready.   You can freeze the leftovers if you like.  This works good with chicken breast, too.
