Does anyone have a good "old world" recipe for pasta sauce.  Not one using store bought, canned or seasoning packets. I mean one from all fresh ingrediants.

Pasta Sauce with Meat


2-3 tablespoon(s) olive oil

2 onions, chopped

1 head(s) garlic, minced

2 pound(s) ground beef

1 tablespoon(s) salt plus 1/2 tsp

2 1/2 teaspoon(s) freshly ground pepper

2 teaspoon(s) paprika

2-28 oz can(s) tomato sauce

2 28 oz can(s) tomato puree

1 28 oz can(s) peeled whole tomatoes with their juice

2 tablespoon(s) dried basil

2 bay leaves cracked

1/2 teaspoon(s) cayenne pepper

6 tablespoon(s) finely chopped fresh parsley

1/2 teaspoon(s) dried oregano

1 cup(s) red wine


Heat a large stockpot on medium heat. Add olive and onions. Saute until the onions are translucent aboout 7-10 minutes. Add the garlic and saute for 1-2 minutes longer. Add the ground beef and saute until brown. Season the meat with about 1/2 tsp salt, 1/2 tsp pepper and the paprika.


Add all 5 cans of tomatoes, roughly chopping the whole peeled tomatoes. Add 1 tablespoon salt, 2 tsp pepper, the basil, bay leaves, cayenne, parsley, oregano, and red wine.


Stir all ingredients until well combined. Bring to a low boil, then lower heat and simmer for 1-4 hours. (the sauce will be ready after an hour but tastes better the longer you simmer it)


Notes: I've been making this for years but it has a real kick to it and I cut the peppers down and also put the whole tomatoes, garlic & onions in a blender, I don't saute them. I usually get around 5-6 containers which I freeze. When I thaw one, I add an 8oz can of tomato sauce.

 2 cups basil packed


1 cup parmegano or pecorino cheese, grated


1 cup toasted pine nuts or walnuts.


1 clove garlic.


1/2 cup extra virgin first pressed olive oil... I prefer the Greek oil Kreta


put in a processor and make a paste


 


Intstant pesto.


I grow three types of Basil so I mix it up a bit with colors and flavors
