Japanese Soy-Glazed Turkey Burgers
1 teaspoon sesame oil
3/4 cup frozen chopped onion, thawed
2 tablespoons low-sodium soy sauce, divided
2 tablespoons dry sherry, divided
1 1/4 pounds ground turkey
1/2 cup panko (Japanese breadcrumbs)
1 large egg white. lightly beaten
1 1/2 tablespoons sugar
1 tablespoon hot water
4 light whole wheat hamburger buns, toasted
4 (1/4 inch thick) slices tomato
4 small green leaf lettuce leaves
Heat oil in a large nonstick skillet coated with cooking spray over med-high heat. Add onion, saute 2 minutes. Add 1 tablespoon soy sauce and 1 tablespoon sherry, saute 30 seconds. Transfer onion mixture to a large bowl. Wipe pan with a paper towel.
Add turkey, panko, and egg white to onion mixture; combine gently with hands just until blended. Divide mixture into 4 equal portions, shaping each into a 4-inch-wide patty.
Heat pan over med-high heat, coat pan with cooking spray. Place patties in pan, and cook 4 minutes on each side or until done.
While patties cook, combine sugar and 1 tablespoon hot water in small bowl, stirring well. Add remaining 1 tablespoon soy sauce and remaining 1 tablespoon sherry; pour over patties in pan. Cook 30 seconds, turning once to coat burgers.
Top bottom half of each bun with 1 patty; spoon any remaining glaze in pan over each. Top each with 1 tomato slice, 1 lettuce leaf and top half of bun.
