1 1/2 cup cooked light meat chicken, cubed, shredded, or sliced
16 oz fat-free canned refried beans
8 oz Medium Picante Sauce
4 1/2 oz canned chopped hot green chili peppers
2 tbsp Mild Taco Seasoning Mix
1/2 cup Green Onions
6 large fat-free flour tortilla(s)
1 cup shredded reduced-fat Mexican cheese
Preheat oven to 400. Add refried beans, picante sauce, chili peppers, seasoning & onions to chicken. Mix well. Wrap tortillas in foil; warm in oven for 10 minutes. Assemble chimichangas by spooning 1/2 cup of mixture on each tortillas, fold in sides & roll up. Place chimichangas in prepared baking dish. Bake uncovered until tortillas are crips & brown, about 20 minutes.
